My first attempt at a Filipino recipe. My intentions with this sauce were to make something that was recognizably Filipino but also would particularly pair well with roasted pork which is a staple in the Philippines. I used cane vinegar, quite a few bay leaves, and soy sauce to stick with the common flavors of the Philippines and I also added other ingredients to create a tangy and richly flavored sauce.
