How long does it last?

It lasts about 3 years unrefrigerated and my goal is for it to be so good you want to use it often in which case it should never come close to expiring.  If refrigerated it will stay fresh longer. Keep in mind that some recipes contain coconut cream which will solidify at cooler temperatures in which case you will have to take it out of the refrigerator to thaw before use.

Where should I store it?

A cool dark place when storing. Cool keeps the sauce fresher and slows natural separation. Dark prevents discoloration. I keep mine on the dining table or in a readily available place that is out of the sun.

What happens if it discolors?

This is natural and does not mean it has gone bad. It is still good, just less appealing so keep away from windows and in a darker place to prevent discoloring.
