Banana and truffle is a pairing that no one would ever think to put together but for some reason I did. My goal was to make a truffle sauce that was balanced with its flavors, not too strong and something that follows all my rules. Most people may be familiar with Truff’s hot sauce and personally I find it to be too strong of a truffle flavor and they add a fair amount of sugar as well. My thought in completing this recipe with banana fortunately came to me in achieving a smooth mouthfeel while adding extra aroma and sweetness.
